Use Rhum J.M Agricole Blanc for this cocktail. Its warm and earthy taste, with hints of herbs, lemon and tropical fruit, creates the perfect base.

Place the lime, pineapple wedge and sugar into a cocktail shaker and muddle well.
Fill the shaker with ice and then add the rum and Averna Amaro.
Vigorously shake the mixture for 35 seconds and then double strain into a cocktail glass filled with crushed ice.
