Jennie's Lentil Soup freezes well. Make sure to have lots of crackers on hand.
Ingredients
- 1 pound lentils, washed
- 1 package dry onion soup mix
- 1 cup celery, chopped
- 1 cup carrots, chopped
- 1/2 stick margarine
- 2 tablespoons Parmesan cheese, grated
- salt and pepper to taste
Directions
- Add water to lentils in a large pot and bring to a boil. Add remaining ingredients except for margarine and cheese. Cook, 30 to 45 minutes or until lentils are tender.
- Remove from heat. Stir in margarine and cheese. Add salt and pepper to taste.
