Jennie's Lentil Soup freezes well. Make sure to have lots of crackers on hand.


  • 1 pound lentils, washed
  • 1 package dry onion soup mix
  • 1 cup celery, chopped
  • 1 cup carrots, chopped
  • 1/2 stick margarine
  • 2 tablespoons Parmesan cheese, grated
  • salt and pepper to taste


  1. Add water to lentils in a large pot and bring to a boil. Add remaining ingredients except for margarine and cheese. Cook, 30 to 45 minutes or until lentils are tender.
  2. Remove from heat. Stir in margarine and cheese. Add salt and pepper to taste.
