Use the rum of your choice for this fresh ginger and pineapple juice cocktail but note that lighter island rums work best.

- 1-1/2 ounces rum
- slice of fresh ginger
- 2 ounces pineapple juice
- 1 barspoon simple syrup
- 1 dash Angostura bitters
- lime wheel to garnish
- Place the ginger into a cocktail shaker and muddle well.
- Add the rum, pineapple juice, simple syrup and bitters to the shaker and then fill with ice.
- Vigorously shake the mixture for 35 seconds and then strain into a cocktail glass filled with cracked ice.
- Garnish the drink with the lime wheel and then serve immediately.
