Use the rum of your choice for this fresh ginger and pineapple juice cocktail but note that lighter island rums work best.

  • 1-1/2 ounces rum
  • slice of fresh ginger
  • 2 ounces pineapple juice
  • 1 barspoon simple syrup
  • 1 dash Angostura bitters
  • lime wheel to garnish


  1. Place the ginger into a cocktail shaker and muddle well.
  2. Add the rum, pineapple juice, simple syrup and bitters to the shaker and then fill with ice.
  3. Vigorously shake the mixture for 35 seconds and then strain into a cocktail glass filled with cracked ice.
  4. Garnish the drink with the lime wheel and then serve immediately.
