Choose your favorite: Blackberry or Raspberry for Jam Cake.
Ingredients
- 1/2 cup margarine, softened
- 1 cup light brown sugar
- 3 eggs, separated
- 1 teaspoon baking soda
- 1 cup jam
- 1/4 cup sour milk (add 1/4 teaspoon vinegar to fresh milk)
- 2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/8 teaspoon cloves
- 1/8 teaspoon ground ginger
Directions
- Cream butter and sugar. Add egg yolks and beat until frothy. Sift dry ingredients and add to creamed mixture, alternating with milk and jam. Beat mixture for 3 minutes. Fold in stiffly beaten egg whites.
- Bake in 2 greased and floured round cake pans for 30 minutes at 375 degrees F.
