Choose your favorite:  Blackberry or Raspberry for Jam Cake.

Ingredients

  • 1/2 cup margarine, softened
  • 1 cup light brown sugar
  • 3 eggs, separated
  • 1 teaspoon baking soda
  • 1 cup jam
  • 1/4 cup sour milk (add 1/4 teaspoon vinegar to fresh milk)
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1/8 teaspoon ground ginger

Directions

  1. Cream butter and sugar. Add egg yolks and beat until frothy. Sift dry ingredients and add to creamed mixture, alternating with milk and jam. Beat mixture for 3 minutes. Fold in stiffly beaten egg whites.
  2. Bake in 2 greased and floured round cake pans for 30 minutes at 375 degrees F.
