Hot and spicy egg dish for people who like a little tongue heat in the morning.


  • 1-7 ounce can whole jalapeno peppers
  • 1 cup grated longhorn cheese
  • 4 eggs (well beaten)


  1. Drain and seed peppers
  2. Open peppers to lay flat on a 9-inch pie pan
  3. Sprinkle grated cheese on top of peppers
  4. Pour eggs on top
  5. Bake at 350 degrees for 25-30 minutes
  6. Slice into wedges and serve from the pan
