Slow cooked Italian zucchini side dish.
- 1 red onion, sliced
- 1 green bell pepper, sliced
- 4 medium zucchini, sliced
- 1 (14.5 ounce) can chopped Italian style tomatoes
- 1/4 cup grated Parmesan cheese
- 1 tablespoon butter or margarine
- Layer the onion, pepper, zucchini and tomatoes in the slow cooker. Sprinkle the cheese on top, then drizzle the butter over it. Cover and cook on low for 3 hours, or on high for 1 1/2 hours.
