Italian Cream Cake is simply Fantastico!
Ingredients
- 1/2 cup butter
- 1/2 cup shortening
- 2 cups sugar
- 5 eggs, separated
- 2 cups flour, sifted twice
- 1 teaspoon baking soda
- 1 cup buttermilk
- 1, 3 ounce can coconut
- 1 cup pecans, chopped
- 1 teaspoon vanilla
Directions
- Beat egg whites until stiff and set aside. Cream butter, shortening and sugar. Add yolks one at a time, beating after each addition.
- Dissolve baking soda in buttermilk and add alternately with flour to creamed mixture. Add coconuts, nuts, and vanilla. Fold in egg whites.
- Pour into 3 greased and floured 9 inch round cake pans. Bake at 350 degrees F for 25 minutes.
