Italian Cream Cake is simply Fantastico!

Ingredients

  • 1/2 cup butter
  • 1/2 cup shortening
  • 2 cups sugar
  • 5 eggs, separated
  • 2 cups flour, sifted twice
  • 1 teaspoon baking soda
  • 1 cup buttermilk
  • 1, 3 ounce can coconut
  • 1 cup pecans, chopped
  • 1 teaspoon vanilla

Directions

  1. Beat egg whites until stiff and set aside. Cream butter, shortening and sugar. Add yolks one at a time, beating after each addition.
  2. Dissolve baking soda in buttermilk and add alternately with flour to creamed mixture. Add coconuts, nuts, and vanilla. Fold in egg whites.
  3. Pour into 3 greased and floured 9 inch round cake pans. Bake at 350 degrees F for 25 minutes.
