Italian Bean Soup

A wonderful mixture of beans makes this a delicious dish.

Ingredients

  • 1 cup dry great northern beans
  • 1 cup pinto beans
  • 1 28 oz can tomatoes, cut up
  • 1 onion, chopped
  • 2 tbsp. instant beef bouillon granules
  • 2 cloves garlic, minced
  • 2 tsp. Italian seasoning
  • 1/2 tsp. pepper
  • 1 can Italian-style green beans
  • 1 tbsp. butter
  • 1/2 teaspoon garlic salt
  • 1 tablespoon dry parsley flakes
  • 1/4 tsp. Italian seasoning
  • 10 slices French bread cut into 1/2 inch slices

Directions

  1. Rinse dry beans.
  2. Soak overnight in cold water in a covered pan.
  3. Drain and rinse beans.
  4. Combine beans, 4 cups fresh water, undrained tomatoes, onion, bouillon, garlic, the 2 teaspoons Italian seasoning, and pepper in your crock pot.
  5. Cover and cook on low for 11 to 13 hours (high 5 to 6) or until beans are almost tender.
  6. Stir green beans into soup.
  7. Cook another 30 minutes on high.
  8. In a small bowl stir together margarine, garlic salt, parsley and the 1/8 teaspoon Italian seasoning.
  9. Spread on 1 side of each bread slice.
  10. Broil 4 to 5 inches from the heat until crisp and light brown.
  11. Spoon soup in bowls.
  12. Float 2 small piece of herb toast in each bowl of soup.
