This recipe for Indian curry salad is given an enjoyable tang of creamy flavor by substituting almost all of the mayonnaise for plain Greek yogurt.
Ingredients
- 4 cooked chicken breasts, cut into medium sized pieces
- 1/3 cup chopped green onions
- 2-1/2 cup red grapes, sliced in half
- 2 cup sliced almonds
- 1 can pineapple chunks
- 1/4 cup mayonnaise
- 3/4 cup plain Greek yogurt
- 1 tablespoon sugar
- 2 tablespoons Curry Powder
- Salt to taste
Directions
- Place the mayonnaise, yogurt, curry, sugar and a few pinches of salt into a bowl and mix well until blended.
- Add the chicken, onions, grapes, almonds and pineapple and stir well to combine. Cover the salad and place in the refrigerator to chill for 1 hour prior to serving.
