Impossible Zucchini and Tomato Pie

Impossible Zucchini and Tomato Pie makes its own crust.

Ingredients

  • 2 cups zucchini, chopped
  • 1 cup tomato, chopped
  • 1/2 cup onion, chopped
  • 1/3 cup Parmesan cheese, grated
  • 1 1/2 cups milk
  • 3/4 cup buttermilk baking mix
  • 3 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. Grease a 10 inch deep pie plate. Sprinkle zucchini, tomato, onion and cheese in plate. Beat remaining ingredients until smooth, 15 seconds in blender. Pour into plate.
  2. Bake at 400 degrees F for 30 minutes or until knife inserted in center comes out clean.
