Impossible Zucchini and Tomato Pie makes its own crust.
Ingredients
- 2 cups zucchini, chopped
- 1 cup tomato, chopped
- 1/2 cup onion, chopped
- 1/3 cup Parmesan cheese, grated
- 1 1/2 cups milk
- 3/4 cup buttermilk baking mix
- 3 eggs
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Directions
- Grease a 10 inch deep pie plate. Sprinkle zucchini, tomato, onion and cheese in plate. Beat remaining ingredients until smooth, 15 seconds in blender. Pour into plate.
- Bake at 400 degrees F for 30 minutes or until knife inserted in center comes out clean.
