Impossible Coconut Pie makes its own crust if baked in a metal pie pan.
Ingredients
- 1 cup sugar
- 1/2 cup flour
- 4 eggs
- 2 cups milk
- 1 cup flaked coconut
- 1 stick butter, softened
- 1/2 teaspoon salt
- 2 teaspoons vanilla
Directions
- Place all ingredients except milk in a food processors. Pulse to blend and then add milk gradually.
- Pour into a greased 10 inch pie pan. Bake at 350 degrees F for 40-45 minutes. Cool slightly before serving.
