Slight hint of orange flavor in this simple cake.

Ingredients

2 1/4 cups flour
3 teaspoons baking powder
1 teaspoon salt
1 3/4 cups sugar
1/2 cup shortening
1 1/4 cups pecans, chopped
4 eggs
1/2 cup orange juice
3/4 cup milk
1 teaspoon vanilla
3 teaspoons orange rind, grated

Directions

Sift together the dry ingredients. Mix in the shortening, 3/4 cup of nuts, eggs, milk, vanilla, orange juice and rind. Mix until well blended.
Pour into a 10 inch square pan and top with the remaining 1/2 cup of nuts. Bake at 350 degrees Fahrenheit for 50-60 minutes.
