This tangy and thick vinaigrette is made with hummus; a creamy Arabic spread made out of chickpeas, tahini, lemon and garlic.  Wonderful drizzled over couscous or used in sandwiches.


  • 1/4 cup
  • Salt and freshly ground pepper
  • 1 cup coarsely chopped flat-leaf parsley
  • 1 cup prepared hummus
  • 1/4 cup white wine vinegar


  1. Put the hummus, vinegar, chopped parsley and olive oil in a blender and puree the mixture until smooth. Season the vinaigrette to taste with salt and pepper and serve immediately.
