This tangy and thick vinaigrette is made with hummus; a creamy Arabic spread made out of chickpeas, tahini, lemon and garlic. Wonderful drizzled over couscous or used in sandwiches.
- 1/4 cup
- Salt and freshly ground pepper
- 1 cup coarsely chopped flat-leaf parsley
- 1 cup prepared hummus
- 1/4 cup white wine vinegar
- Put the hummus, vinegar, chopped parsley and olive oil in a blender and puree the mixture until smooth. Season the vinaigrette to taste with salt and pepper and serve immediately.
