This sweet and moist cake is absolutely delicious! Ideal for almost any occasion. Can top with your favorite cream cheese frosting.

Ingredients

  • 3 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1-1/2 cups honey
  • 3/4 cup buttermilk
  • 3 eggs
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla
  • 2 cups finely grated carrots
  • 1 8-ounce can crushed pineapple, drained
  • 1 cup chopped walnuts

Directions

  1. Combine flour, baking soda, salt, cinnamon, nutmeg and ginger.
  2. In a separate bowl, mix together honey, buttermilk, eggs, oil and vanilla; mix well.
  3. Fold in carrots, pineapple and walnuts.
  4. Pour into a greased 9x13 baking dish.
  5. Bake at 350 degrees for 50 minutes.
