This sweet and moist cake is absolutely delicious! Ideal for almost any occasion. Can top with your favorite cream cheese frosting.
Ingredients
- 3 cups flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1-1/2 cups honey
- 3/4 cup buttermilk
- 3 eggs
- 1/2 cup vegetable oil
- 2 teaspoons vanilla
- 2 cups finely grated carrots
- 1 8-ounce can crushed pineapple, drained
- 1 cup chopped walnuts
Directions
- Combine flour, baking soda, salt, cinnamon, nutmeg and ginger.
- In a separate bowl, mix together honey, buttermilk, eggs, oil and vanilla; mix well.
- Fold in carrots, pineapple and walnuts.
- Pour into a greased 9x13 baking dish.
- Bake at 350 degrees for 50 minutes.
