These delicious muffins make a sweet treat for breakfast.

Ingredients

  • 4 tablespoons butter
  • 5 tablespoons honey
  • 1 cup plain yogurt
  • 1 egg
  • 1 lemon, rind grated
  • 1/4 cup lemon juice
  • 1/4 cup flour
  • 1/2 cup wheat flour
  • 1-1/2 teaspoons baking soda
  • 1/4 teaspoon nutmeg

Directions

  1. Preheat oven to 375 degrees.
  2. Over medium heat, melt butter and honey. Remove from heat and allow to cool slightly.
  3. Mix together yogurt, egg, lemon rind and juice until light and fluffy. Add butter and honey mixture; set aside.
  4. Combine flours, baking soda and nutmeg. Fold into yogurt mixture; blend well.
  5. Pour batter into prepared muffin tin.
  6. Bake at 375 degrees for 20-25 minutes or until the tops spring back.
