These delicious muffins make a sweet treat for breakfast.
Ingredients
- 4 tablespoons butter
- 5 tablespoons honey
- 1 cup plain yogurt
- 1 egg
- 1 lemon, rind grated
- 1/4 cup lemon juice
- 1/4 cup flour
- 1/2 cup wheat flour
- 1-1/2 teaspoons baking soda
- 1/4 teaspoon nutmeg
Directions
- Preheat oven to 375 degrees.
- Over medium heat, melt butter and honey. Remove from heat and allow to cool slightly.
- Mix together yogurt, egg, lemon rind and juice until light and fluffy. Add butter and honey mixture; set aside.
- Combine flours, baking soda and nutmeg. Fold into yogurt mixture; blend well.
- Pour batter into prepared muffin tin.
- Bake at 375 degrees for 20-25 minutes or until the tops spring back.
