Ingredients

  • 4 tablespoons butter
  • 5 tablespoons honey
  • 1 cup plain yogurt
  • 1 egg
  • 1 grated lemon rind
  • 1/4 cup lemon juice
  • 1/4 cup flour
  • 1/2 cup wheat flour
  • 1-1/2 teaspoons baking soda
  • 1/4 teaspoon nutmeg
  • 1/2 cup sugar
  • 1/3 cup flour
  • 1/4 cup butter
  • 1/2 teaspoon cinnamon

Directions

  1. Over medium heat, melt butter and honey. Remove from heat and allow to cool slightly.
  2. Mix together yogurt, egg, lemon rind and juice; stir in butter and honey mixture.
  3. In a separate bowl, combine 1/4 cup flour, wheat flour, baking soda and nutmeg.
  4. Blend flour combination into honey mixture.
  5. Pour batter into a greased 8x8 baking dish.
  6. Mix together remaining flour, sugar, cinnamon and butter until mixture becomes crumbly; sprinkle over top of cake batter.
  7. Bake at 375 degrees for 20-25 minutes.
