Impress your friends with this sweet coffee cake at your next breakfast gathering.
Ingredients
- 4 tablespoons butter
- 5 tablespoons honey
- 1 cup plain yogurt
- 1 egg
- 1 grated lemon rind
- 1/4 cup lemon juice
- 1/4 cup flour
- 1/2 cup wheat flour
- 1-1/2 teaspoons baking soda
- 1/4 teaspoon nutmeg
- 1/2 cup sugar
- 1/3 cup flour
- 1/4 cup butter
- 1/2 teaspoon cinnamon
Directions
- Over medium heat, melt butter and honey. Remove from heat and allow to cool slightly.
- Mix together yogurt, egg, lemon rind and juice; stir in butter and honey mixture.
- In a separate bowl, combine 1/4 cup flour, wheat flour, baking soda and nutmeg.
- Blend flour combination into honey mixture.
- Pour batter into a greased 8x8 baking dish.
- Mix together remaining flour, sugar, cinnamon and butter until mixture becomes crumbly; sprinkle over top of cake batter.
- Bake at 375 degrees for 20-25 minutes.
