Sweet, honey-glazed carrots are given an extra ‘kick’ of flavor with the addition of cayenne pepper. Serve this winter side dish as a delicious accompaniment to roasted poultry and pork.
Ingredients
- 4 tablespoons unsalted butter
- 2 pounds carrots, peeled and cut into 1/2-inch-thick rounds
- 1/3 cup honey
- 1 teaspoon sea salt
- 1 large pinch cayenne
- 1/4 cup water
Directions
- Place the butter into a large sauté pan over medium-high heat. Once melted, add the carrots, stir to coat, and cook for 3 minutes.
- Add the honey, water, salt, and cayenne to the pan and stir well to combine. Cook the mixture, covered, over medium heat for 5 minutes, and then uncover the pan and continue to cook for 2 minutes more. The sauce will turn into syrup and the carrots will be glazed.
