Homemade southern potato chip recipe.


  • Medium or large Potatoes
  • Salt (1/2 teaspoon per cu pof potatoes)
  • Red pepper to taste


  1. Slice the potatoes into thin wafers. Cover with ice water for 2 hours.
  2. Drain and sprinkle with the salt.
  3. Fry in hot grease, circulating, until golden brown. Drain and sprinkle with red pepper.
