Homemade English Muffins

  • 1 1/4 cups milk, scalded
  • 3/4 teaspoon salt
  • 1 package yeast
  • 4 cups flour, sifted
  • 3 tablespoons butter, melted


  1. Combine milk and salt in large bowl; cool to lukewarm. Dissolve yeast in 1/4 cup warm water. Add to cooled milk. Add half the flour, beating well. Stir in shortening, mixing well. Add remaining flour to make soft dough.
  2. Place in greased bowl and brush top of dough with a small amount of water. Let rise, covered, in warm place until doubled in bulk. Knead gently on lightly floured surface.
  3. Roll out 1/2 inch thick and cut into 4 inch rounds. Place on board sprinkled with cornmeal. Let rise, covered, for 45 minutes or until light.
  4. Bake over low heat on slightly greased, moderately hot griddle for about 10 minutes on each side.
