Homemade Chicken Salad is made from a whole fryer poached in a savory broth.


  • 1 fryer chicken, cut up
  • bay leaf
  • parsley
  • 1 can crushed pineapple, drained
  • 1/2 cup celery, chopped
  • 3 tablespoons mayonnaise
  • lettuce leaves and toasted slivered almonds


  1. Boil chicken pieces with bay leaf and parsley to cover in saucepan until tender. Let cool. Bone chicken and cut into bite sized pieces.
  2. Combine chicken, pineapple, celery and mayonnaise in bowl, mixing well. Serve on lettuce leaves and garnish with toasted slivered almonds.
