Homemade Chicken Salad is made from a whole fryer poached in a savory broth.
- 1 fryer chicken, cut up
- bay leaf
- 1 can crushed pineapple, drained
- 1/2 cup celery, chopped
- 3 tablespoons mayonnaise
- lettuce leaves and toasted slivered almonds
- Boil chicken pieces with bay leaf and parsley to cover in saucepan until tender. Let cool. Bone chicken and cut into bite sized pieces.
- Combine chicken, pineapple, celery and mayonnaise in bowl, mixing well. Serve on lettuce leaves and garnish with toasted slivered almonds.
