Holiday Gelatin Salad is a festive green! Cut into 2-inch squares and serve on a lettuce leaf garnished with whipped topping and a maraschino cherries.
- 1 can crushed pineapple
- 2 (3 ounce) packages lime gelatin
- 1 (8 ounce) package cream cheese, softened
- 1 cup pecans
- Drain pineapple, reserving juice. Dissolve gelatin in 2 cups boiling water. Cool for 20 minutes. Add enough water to reserved pineapple juice to measure 1 cup liquid. Stir liquid into cream cheese until smooth. Add cream cheese mixture to cooled gelatin. Stir in pineapples and pecans; blend well.
- Pour into a square dish. Chill until set.
