Holiday Bar Cookies are a delightful easy to make treat.


  • Crust: 1/2 cup shortening
  • 1/2 cup confectioner's sugar, sifted
  • 2 egg yolks
  • 1 cup flour, sifted
  • Filling: 2 egg whites
  • 1/2 cup sugar
  • 1/4 teaspoon cinnamon
  • 1 cup nuts, ground
  • 3/4 cup raspberry jam, seedless


  1. Crust: Cream powdered sugar and shortening together. Add egg yolks, one at a time, mixing well after each addition. Mix in flour thoroughly. Press mixture in a 9 by 13 inch ungreased baking pan. Bake at 350 degrees F for 10 minutes.
  2. Filling: Whip jam with fork to soften; spread over hot crust. Beat egg whites until stiff, gradually beating in sugar and cinnamon. Fold in ground nuts. Spread over jam layer. Return to oven. Bake 25 minutes at 350 degrees F. Cool slightly, then cut into bars.
