- 4 small red potatoes
- 2 teaspoons minced fresh parsley
- 2 teaspoons minced chives
- 2 teaspoons butter
- Peel a 1/2 inch strip around the center of each potato.
- Place in a pan and add enough water to cover the potato plus 1/2 inch.
- Cook covered for 20 minutes or until tender.
- Drain potatoes and add remaing ingredients.
- Toss to coat.
