These little potatoes go great with any meal.

Ingredients

  • 4 small red potatoes
  • 2 teaspoons minced fresh parsley
  • 2 teaspoons minced chives
  • 2 teaspoons butter

Directions

  1. Peel a 1/2 inch strip around the center of each potato.
  2. Place in a pan and add enough water to cover the potato plus 1/2 inch.
  3. Cook covered for 20 minutes or until tender.
  4. Drain potatoes and add remaing ingredients.
  5. Toss to coat.
  6. Serve.
