Herbed Pot Roast uses a variety of delicious herbs and harvest vegetables.

Ingredients

  • 1 boneless rump roast or chuck roast (3 1/2 pounds)
  • 8 medium potatoes, peeled and quartered
  • 1 can condensed beef broth
  • 1 tablespoon cooking oil
  • 1 teaspoon dry marjoram
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon pepper
  • 1 large onion, quartered
  • 1 teaspoon salt
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 8 carrots, cut into thirds
  • 1 cup water

Directions

  1. In a large Dutch oven, brown roast in oil. Combine seasonings and sprinkle over meat. Add broth and bring to a boil. Cover and bake at 325 degrees F for 2 hours, basting occasionally.
  2. Add carrots, potatoes, onions and water. Cover and bake 1 hour or until vegetables are tender. Thicken pan juices for gravy, if desired.
