Light and flavorful, perfect as a side for any main meal.

Ingredients

  • 2 carrots, thinly sliced on a diagonal
  • 1 cucumber, halved lengthwise, thinly sliced crosswise
  • 16 ounces mix of lettuces, torn into bite-size pieces
  • 1 1/2 cups packed assortment of fresh herbs (dill, parsley, mint, basil, cilantro, etc)
  • 1/4 cup extra-virgin olive oil
  • 1/2 teaspoon fine sea salt
  • 2 tablespoons red-wine vinegar

Directions

  1. Toss all ingredients in a large bowl and serve immediately.
