Ingredients
- 2 carrots, thinly sliced on a diagonal
- 1 cucumber, halved lengthwise, thinly sliced crosswise
- 16 ounces mix of lettuces, torn into bite-size pieces
- 1 1/2 cups packed assortment of fresh herbs (dill, parsley, mint, basil, cilantro, etc)
- 1/4 cup extra-virgin olive oil
- 1/2 teaspoon fine sea salt
- 2 tablespoons red-wine vinegar
Directions
- Toss all ingredients in a large bowl and serve immediately.
