Refrigerator Bran Muffins makes 3 dozen muffins. Great for a hearty breakfast!
Ingredients
- 1 cup boiling water
- 1 cup 100 % bran
- 1/2 cup shortening
- 1 cup sugar
- 2 eggs
- 1 pint buttermilk
- 2 1/2 cups flour
- 2 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 cups All Bran cereal
Directions
- Pour boiling water over 100% bran and set aside. Cream shortening with sugar; add eggs. Add buttermilk and cooled bran. Add flour, baking soda, salt and All Bran to mixture and fold in until moistened.
- Pour into greased muffin tins. Bake at 400 degrees F for 20-25 minutes.
