Hearty Black Bean Soup is full of good things and yogurt gives it a tangy flavor.


  • 2/3 cup onion, chopped
  • 1 tablespoon cumin
  • 1 1/2 cup chicken broth
  • 1/2 cup nonfat plain yogurt
  • 1 teaspoon red pepper flakes, crushed
  • 3 cups chunky salsa
  • 3, 16 ounce cans black beans, undrained
  • 4 garlic cloves, minced
  • 2 tablespoons vegetable oil
  • 2 tablespoons lime juice


  1. In a 4 quart pot, over medium heat, cook onion, garlic, cumin and pepper flakes in oil until onion is tender, about 3 minutes. Remove from heat.
  2. In food processor, puree 2 cans of beans and their liquid in batches with the chicken broth; add to pot. Stir in remaining beans, salsa and lime juice. Heat mixture to a boil and reduce heat to low. Simmer for 30 minutes. Ladle soup into bowl and top with a dollop of yogurt.
