Hearty Black Bean Soup is full of good things and yogurt gives it a tangy flavor.
Ingredients
- 2/3 cup onion, chopped
- 1 tablespoon cumin
- 1 1/2 cup chicken broth
- 1/2 cup nonfat plain yogurt
- 1 teaspoon red pepper flakes, crushed
- 3 cups chunky salsa
- 3, 16 ounce cans black beans, undrained
- 4 garlic cloves, minced
- 2 tablespoons vegetable oil
- 2 tablespoons lime juice
Directions
- In a 4 quart pot, over medium heat, cook onion, garlic, cumin and pepper flakes in oil until onion is tender, about 3 minutes. Remove from heat.
- In food processor, puree 2 cans of beans and their liquid in batches with the chicken broth; add to pot. Stir in remaining beans, salsa and lime juice. Heat mixture to a boil and reduce heat to low. Simmer for 30 minutes. Ladle soup into bowl and top with a dollop of yogurt.
