A big bowl of Hearty Bean Soup and a loaf of homemade bread is all you need for a satisfying meal.
- 1 teaspoon vegetable oil
- 1 onion, chopped
- 1 carrot, chopped
- 1 zucchini, chopped
- 1, 11 ounce can condensed bean with bacon soup
- 1 can water
- 1, 14 ounce can diced tomatoes with garlic and onion, undrained
- salt and pepper to taste
- Heat oil in saucepan over medium high heat. Add onion and carrot. Cook and stir until onion is transparent, about 3 minutes.
- Stir in zucchini, soup, water and tomatoes. Bring to a boil; reduce heat and simmer 5 minutes. Season with salt and pepper.
