These healthy muffins are quite delicious! Served alongside a hot cup of coffee, they make a wonderful afternoon snack.

Ingredients

  • 1-1/2 cups flour
  • 1-1/2 cups wheat bran
  • 1/4 cup wheat germ
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 eggs
  • 1/4 cup molasses
  • 1/4 cup vegetable oil
  • 1-1/2 cups milk
  • 1-1/4 cups shredded carrots
  • 1/2 cup chopped nuts
  • 1/2 cup chopped raisins

Directions

  1. Combine flour, bran, wheat germ, brown sugar, baking soda, cinnamon and nutmeg; set aside.
  2. Beat eggs, molasses, vegetable oil and milk.
  3. Blend flour combination into egg mixture.
  4. Fold in carrots, nuts and raisins.
  5. Pour batter into greased muffin tins.
  6. Bake at 400 degrees for 20-25 minutes.
