These healthy muffins are quite delicious! Served alongside a hot cup of coffee, they make a wonderful afternoon snack.
Ingredients
- 1-1/2 cups flour
- 1-1/2 cups wheat bran
- 1/4 cup wheat germ
- 1/2 cup brown sugar
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 2 eggs
- 1/4 cup molasses
- 1/4 cup vegetable oil
- 1-1/2 cups milk
- 1-1/4 cups shredded carrots
- 1/2 cup chopped nuts
- 1/2 cup chopped raisins
Directions
- Combine flour, bran, wheat germ, brown sugar, baking soda, cinnamon and nutmeg; set aside.
- Beat eggs, molasses, vegetable oil and milk.
- Blend flour combination into egg mixture.
- Fold in carrots, nuts and raisins.
- Pour batter into greased muffin tins.
- Bake at 400 degrees for 20-25 minutes.
