Vitamin B rich healthy roasted corn salad.
Ingredients
- 1 sweet corncob
- 1/4 cup tomato, sliced
- 1/2 cup capsicum, sliced
- 1/2 cup onion, sliced
- 2 teaspoons lemon juice
- 1 teaspoon olive oil
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon chili powder
Directions
- Take a corncob and roast it.
- Remove the corn kernels from the cob.
- Take a bowl and add corn kernels, tomato, capsicum, onion and salt in it. Mix well.
- Add olive oil, lemon juice and chili powder. Mix well.
- Serve immediately.
