Vitamin B rich healthy roasted corn salad.

Ingredients

  • 1 sweet corncob
  • 1/4 cup tomato, sliced
  • 1/2 cup capsicum, sliced
  • 1/2 cup onion, sliced
  • 2 teaspoons lemon juice
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon chili powder

Directions

  1. Take a corncob and roast it.
  2. Remove the corn kernels from the cob.
  3. Take a bowl and add corn kernels, tomato, capsicum, onion and salt in it. Mix well.
  4. Add olive oil, lemon juice and chili powder. Mix well.
  5. Serve immediately.
