- 8 hardboiled eggs, 4 whole eggs and 4 egg whites only
- 1/2 cup chopped celery
- 1/3 cup chopped green onions
- 2 tablespoon light mayonnaise
- 2 tablespoons non-fat sour cream
- 1 teaspoon spicy mustard
- 1 teaspoon paprika
- Salt and pepper to taste
- In a medium-size bowl, mash the eggs. Add all other ingredients and mash with a fork until well mixed. Chill and enjoy on your favorite kind of bread!
