  • 8 hardboiled eggs, 4 whole eggs and 4 egg whites only
  • 1/2 cup chopped celery
  • 1/3 cup chopped green onions
  • 2 tablespoon light mayonnaise
  • 2 tablespoons non-fat sour cream
  • 1 teaspoon spicy mustard
  • 1 teaspoon paprika
  • Salt and pepper to taste


  1. In a medium-size bowl, mash the eggs. Add all other ingredients and mash with a fork until well mixed. Chill and enjoy on your favorite kind of bread!
