A healthy version of sweet potato fries that will make your mouth water and your scale thank you.


  • 2 sweet potatoes (peels and cut into french fry sticks
  • 2 tablespoons olive oil
  • coarse salt and ground pepper


  1. Preheat oven to 400 degrees
  2. Place cut potatoes and oil in a bowl or plastic bag and coat with the oil
  3. Place fries on baking sheet in a single layer
  4. Bake for 30 minutes turning at about half-way
  5. Sprinkle with salt and pepper to taste
