A simple pineapple cake with a sweet coconut and pineapple topping.
Ingredients
- 1 (18 ounce) box yellow cake
- 4 eggs
- 3/4 cup canola oil
- 1/2 (20 ounce) can crushed pineapple with half juice
- Cake Topping:
- 1/2 (20 ounce) can crushed pineapple with half juice
- 1/2 cup butter
- 1 (16 ounce) box powdered sugar
- 1 (6 ounce) can flaked coconut
Directions
- Preheat the oven to 350 degrees Fahrenheit. Grease and flour a 9x13-inch pan.
- Combine the cake ingredients and beat for 4 minutes. Pour into the prepared pan. Bake for 30-35 minutes.
- While the cake is baking, bring the remaining pineapple and juice and butter to a boil for 2 minutes. Stir in the sugar and coconut.
- Once the cake has cooled, use a knife to punch holes in the cake. Pour and spread the hot topping over.
