Slow cooked pineapple, mandarin oranges and coconut.
- 4 cups pineapple chunks
- 1 (11 ounce) can mandarin oranges, drained
- 1/3 cup packed brown sugar
- 1/4 cup rum
- 2 tablespoons buttter or margarine
- 1/3 cup shredded coconut, toasted
- Mix together everything but the coconut in the slow cooker. Cover and cook on high for 1 1/2-2 hours, or until bubbly.
- Serve warm with the coconut sprinkled on top.
