Fresh pear puree, vodka and chilled champagne make the perfect blend for this red sugar-rimmed cocktail.

- 2 ounces vodka
- 3 ounces pear puree
- chilled champagne
- Place some red sugar onto a plate. Run a bit of the pear puree around the rim of a glass to moisten and then dip the rim into the sugar, pressing gently to adhere. Put the sugar -rimmed glass in the freezer for 5 minutes to chill.
- Place the vodka and pear puree into a cocktail shaker filled with ice.
- Vigorously shake the mixture for 35 seconds and then strain into the prepared cocktail glass.
- Top the drink with the champagne and then serve immediately.
