Harvest Apple Cake is full of moist apples and is made with whole wheat flour. 

Ingredients

  • 2 cups whole wheat flour
  • 1/4 cup toasted wheat germ
  • 2 tablespoons baking soda
  • 1 tablespoon cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 4 cups Granny Smith apples, peeled and diced
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1/2 cup vegetable oil
  • 1 cup walnuts, chopped
  • 2 eggs
  • 1 teaspoon vanilla

Directions

  1. Stir together flour, wheat germ, baking soda, cinnamon, salt and nutmeg. Set aside.
  2. In a large bowl combine apples, sugar, oil, walnuts, eggs and vanilla.
  3. Add flour mixture and stir gently with a wooden spoon to blend well.
  4. Pour batter into a greased 9 x 13 inch baking pan. Bake at 350 degrees F for 50 minutes or until cake pulls away from sides of pan.
