Harvest Apple Cake is full of moist apples and is made with whole wheat flour.
Ingredients
- 2 cups whole wheat flour
- 1/4 cup toasted wheat germ
- 2 tablespoons baking soda
- 1 tablespoon cinnamon
- 1 teaspoon salt
- 1/2 teaspoon nutmeg
- 4 cups Granny Smith apples, peeled and diced
- 1 cup granulated sugar
- 1 cup brown sugar
- 1/2 cup vegetable oil
- 1 cup walnuts, chopped
- 2 eggs
- 1 teaspoon vanilla
Directions
- Stir together flour, wheat germ, baking soda, cinnamon, salt and nutmeg. Set aside.
- In a large bowl combine apples, sugar, oil, walnuts, eggs and vanilla.
- Add flour mixture and stir gently with a wooden spoon to blend well.
- Pour batter into a greased 9 x 13 inch baking pan. Bake at 350 degrees F for 50 minutes or until cake pulls away from sides of pan.
