Ham Rolls in Curry Sauce is a great and delicious way to use leftover ham slices.

Ingredients

  • 1 1/2 cups cooked rice
  • 1 medium onion, minced fine
  • 1/4 cup chopped parsley
  • 1 tablespoon margarine
  • 1/2 teaspoon salt
  • 1 teaspoon curry powder
  • 4 hard boiled eggs, chopped
  • 8 slices cold boiled ham, thinly sliced
  • Curry Sauce: 1/4 cup margarine
  • 1 teaspoon curry powder
  • 2 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 1 1/2 cups milk

Directions

  1. Mix rice, onion, parsley, margarine, salt and curry powder together. Place a 1/3 or less of rice mixture on each ham slice and roll up. Place seam side down in buttered baking dish.
  2. Cut hardboiled eggs in quarters and place cut side down on ham roll.
  3. Mix ingredients together for curry sauce. Pour sauce over rolls and bake 30 minutes at 350 degrees F.
