Ham Rolls in Curry Sauce is a great and delicious way to use leftover ham slices.
Ingredients
- 1 1/2 cups cooked rice
- 1 medium onion, minced fine
- 1/4 cup chopped parsley
- 1 tablespoon margarine
- 1/2 teaspoon salt
- 1 teaspoon curry powder
- 4 hard boiled eggs, chopped
- 8 slices cold boiled ham, thinly sliced
- Curry Sauce: 1/4 cup margarine
- 1 teaspoon curry powder
- 2 tablespoons cornstarch
- 1/2 teaspoon salt
- 1 1/2 cups milk
Directions
- Mix rice, onion, parsley, margarine, salt and curry powder together. Place a 1/3 or less of rice mixture on each ham slice and roll up. Place seam side down in buttered baking dish.
- Cut hardboiled eggs in quarters and place cut side down on ham roll.
- Mix ingredients together for curry sauce. Pour sauce over rolls and bake 30 minutes at 350 degrees F.
