The secret ingredient in Ham and Red Eye Gravy is coffee.


  • 6 slices country ham, 1/4 inch thick
  • 1/4 cup margarine
  • 1/2 cup strong black coffee
  • 1/4 cup brown sugar
  • salt and pepper to taste


  1. Saute ham in margarine over low heat until slightly browned, turning several times. Remove ham from skillet and cover ham with foil to keep warm.
  2. Stir sugar into pan drippings and heat until sugar dissolves, stirring constantly. Add coffee and simmer 5 minutes. Season gravy to taste. Serve over ham slices.
