The secret ingredient in Ham and Red Eye Gravy is coffee.
- 6 slices country ham, 1/4 inch thick
- 1/4 cup margarine
- 1/2 cup strong black coffee
- 1/4 cup brown sugar
- salt and pepper to taste
- Saute ham in margarine over low heat until slightly browned, turning several times. Remove ham from skillet and cover ham with foil to keep warm.
- Stir sugar into pan drippings and heat until sugar dissolves, stirring constantly. Add coffee and simmer 5 minutes. Season gravy to taste. Serve over ham slices.
