Ham and bean soup recipe.
Ingredients
- 2 cups dried lima beans
- 1 onion, chopped
- 2 cups ham, cooked and cubed
- 1 cup corn, cooked
- 3 slices bacon
- 1 1/2 tablespoons flour
- salt and pepper to taste
Directions
- Fry the bacon, drain and crumble. Reserve the drippings.
- In a large heavy pot place the beans and cover with water. Bring to a coil, and cook until tender. (About 2 1/2 hours).
- Stir in the onion, seasoning, ham, corn, and bacon. Simmer for an hour.
- Combine the bacon drippings and flour in a skillet. Stir until lightly browned. Add in 1 1/2 cups water to form a gravy.
- Pour the gravy into the soup and simmer for an additional 25-30 minutes.
