In this special dinner for two recipe, tomatoes and green peppers are a winning combo in Gypsy Shrimp served over rice. 

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1/4 green pepper, chopped
  • 1 tablespoon flour
  • 1, 14 ounce can tomatoes, peeled
  • 7 whole cloves
  • 1 tablespoon brown sugar
  • 1 bay leaf
  • 1/2 pound medium shrimp, shelled and deveined
  • 1/2 cup hot cooked rice

Directions

  1. Saute onion and green pepper until soft in olive oil. Remove from heat and add flour. Mix thoroughly and return to heat and add tomatoes, cloves, bay leaf and brown sugar. Simmer for 45 minutes.
  2. Remove cloves and bay leaf. Add shrimp and cook for 5-7 minutes. Serve over rice.
