Gulf Coast Shrimp and Rice Casserole is an excellent choice for a seafood lover's buffet dish.

Ingredients

  • 2 cups cooked rice
  • 3/4 cup onion, chopped fine
  • 3/4 cup green pepper, chopped fine
  • 3/4 cup ketchup
  • 1 pound shrimp, cooked
  • 1/2 cup cream
  • 1/4 cup butter, melted
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon pepper
  • 1 teaspoon salt
  • 1/4 cup bread crumbs

Directions

  1. Brush a 1 1/2 quart casserole with some of the melted butter. Place rice on bottom of dish and sprinkle with onion and green pepper. Pour over ketchup and spread evenly with a fork. Add seasonings. Next, place shrimp evenly over ketchup. Drizzle with 1/2 the melted butter, then sprinkle with bread crumbs.
  2. Drizzle with remaining butter. Pour cream over entire surface. Cover and bake casserole at 350 degrees F for 40 minutes.
