Griottine cherries are liquor-soaked cherries that are wonderful used to top desserts or to garnish cocktails. Make this homemade version with Morello, Marashino or Bing cherries.


  • 5 pounds pitted cherries
  • 5 pounds sugar
  • Zest of 1 orange
  • Zest of 1 grapefruit
  • Zest of 1 lemon
  • 1 stick cinnamon
  • 1/2 teaspoon whole cloves
  • 1/2 teaspoon allspice
  • brandy


  1. Place the cherries, the sugar, the fruit zests, cinnamon, cloves and the allspice into a container and toss well to combine.
  2. Add enough brandy to cover the cherries and then tightly cap the container. Place in a cool dry area for 3 months.
