Griottine cherries are liquor-soaked cherries that are wonderful used to top desserts or to garnish cocktails. Make this homemade version with Morello, Marashino or Bing cherries.
Ingredients
- 5 pounds pitted cherries
- 5 pounds sugar
- Zest of 1 orange
- Zest of 1 grapefruit
- Zest of 1 lemon
- 1 stick cinnamon
- 1/2 teaspoon whole cloves
- 1/2 teaspoon allspice
- brandy
Directions
- Place the cherries, the sugar, the fruit zests, cinnamon, cloves and the allspice into a container and toss well to combine.
- Add enough brandy to cover the cherries and then tightly cap the container. Place in a cool dry area for 3 months.
