Green Chili Corn is a mild and creamy side dish to go with any meat or vegetarian meal.
Ingredients
- 2 eggs
- 2 cans cream corn
- 1/4 cup cornmeal
- 1 can mild, chopped green chilis
- 1 and 1/2 cups grated Colby cheese (divided in half in 3/4 cup portions)
- 3/4 teaspoons garlic salt
- 1/2 teaspoon baking powder
- cooking spray
Directions
- Preheat oven to 350 degrees
- Spray casserole dish with cooking spray until well-coated
- Mix all ingredients together and pour into casserole dish
- Bake for 45 minutes or until set
