Slow cooked potato, roast and chile stew.
- 6 medium potatoes, peeled and cubed
- 2 pounds lean pork roast, cubed
- 2 teaspoons salt
- 1 teaspoon pepper
- 1/8 cup minced onion
- 1 (7 oune) can chopped green chile
- 4 cloves garlic, minced
- In the slow cooker, layer the ingredients in this order: potatoes, pork, salt and pepper, onion, green chile and garlic. Pour in only enough water to cover the ingredients. Cover and cook on low for 10-12 hours.
