Two great tastes & textures that work well together, Grapefruit & Avocado Salad brings a touch of sunshine to your plate.
- 2 pink grapefruit
- 2 ripe avocados
- 4 ounces arugula
- 1/4 cup toasted, slivered almonds (or substitute pomegranate seeds)
- 2 tablespoons chili oil
- Salt & pepper to taste
- Slice the tops & bottoms of the grapefruit, cut off the skin and the pith. Working over a small bowl to catch and reserve the juices, divide the grapefruit into sections.
- Pit and peel the avocados, and cut into slices. Add the slices to the grapefruit sections. Whisk the chili oil and a pinch of salt into the reserved grapefruit juice.
- Place your arugula into separate, individual bowls. Top with the grapefruit and avocado, pour over the dressing and garnish with the toasted almonds or pomegranate seeds.
