Grandma's Chicken Soup is comfort food in a bowl.
Ingredients
- 5 pounds chicken pieces
- 2 parsnips, cut in thirds
- 1 green pepper, cut in half
- 10 cups water
- 3 carrots, cut in thirds
- 1 large onion, cut in half
- 2 teaspoons salt
- In a cheese cloth: 4 parsley sprigs
- 4 garlic cloves, crushed
- 1/2 teaspoon dried dill
- additional chicken bouillon for flavor if needed
Directions
- Secure parsley, garlic and dill in a cheese cloth. Put all ingredients in a large stock pot. Boil. Turn down heat and simmer for 3 hours, skimming off fat and foam from top of soup.
- After 3 hours, check seasonings, adding chicken bouillon if desired. Stir well. Remove chicken and debone. Remove vegetables. Refrigerate overnight.
- Remove fat from top of soup. Add chicken and vegetables. Reheat.
