Grandma's Chicken Soup

Grandma's Chicken Soup is comfort food in a bowl.


  • 5 pounds chicken pieces
  • 2 parsnips, cut in thirds
  • 1 green pepper, cut in half
  • 10 cups water
  • 3 carrots, cut in thirds
  • 1 large onion, cut in half
  • 2 teaspoons salt
  • In a cheese cloth: 4 parsley sprigs
  • 4 garlic cloves, crushed
  • 1/2 teaspoon dried dill
  • additional chicken bouillon for flavor if needed


  1. Secure parsley, garlic and dill in a cheese cloth. Put all ingredients in a large stock pot. Boil. Turn down heat and simmer for 3 hours, skimming off fat and foam from top of soup.
  2. After 3 hours, check seasonings, adding chicken bouillon if desired. Stir well. Remove chicken and debone. Remove vegetables. Refrigerate overnight.
  3. Remove fat from top of soup. Add chicken and vegetables. Reheat.
