Graham Cracker Cake is made with ground pecans and topped with a sweet glaze.

Ingredients

  • 1 cup butter
  • 4 eggs, separated
  • 1/2 teaspoon baking soda
  • 1/2 cup ground pecans
  • 2 cups sugar
  • 4 cups graham cracker crumbs
  • 1 1/2 cups buttermilk
  • Glaze Topping: 2 cups powdered sugar, sifted
  • 1/2 teaspoon vanilla
  • 1 teaspoon butter, softened
  • milk

Directions

  1. Cream together butter, sugar and egg yolks. Combine graham cracker crumbs, baking soda and buttermilk. Add to butter mixture and fold in nuts. Beat egg whites until stiff but not dry. Fold into crumb mixture.
  2. Pour batter into a well greased and floured 10 inch tube pan. Bake at 350 degrees F for 1 hour.
  3. Make Glaze Topping: Combine sugar, vanilla and butter; add enough milk until mixture has reached desired consistency. Drizzle over cake.
