A crunchy pineapple, carrot and nut gelatin mold.

Ingredients

1 cup boiling water
1 package lemon gelatin
1 cup reserved pineapple juice
1 cup diced pineapple (reserve juice from can)
1 tablespoon lemon juice
1/3 cup chopped nuts
1/2 teaspoon salt
1 cup grated carrots

Directions

Stir the gelatin into the boiling water until dissolved. Mix in the juice and salt. Chill to slightly thickened.
Stir the pineapple, carrots, nuts and lemon juice in. Pour into mold and refrigerate until firm.
