A crunchy pineapple, carrot and nut gelatin mold.
- 1 cup boiling water
- 1 package lemon gelatin
- 1 cup reserved pineapple juice
- 1 cup diced pineapple (reserve juice from can)
- 1 tablespoon lemon juice
- 1/3 cup chopped nuts
- 1/2 teaspoon salt
- 1 cup grated carrots
- Stir the gelatin into the boiling water until dissolved. Mix in the juice and salt. Chill to slightly thickened.
- Stir the pineapple, carrots, nuts and lemon juice in. Pour into mold and refrigerate until firm.
