Lightly breaded fried catfish fillet dinner.
- 3 eggs
- 3/4 cup flour
- 3/4 cup cornmeal
- 1 teaspoon garlic powder
- 6-8 (4-8 ounce) catfish fillets
- Canola oil
- Beat the eggs until foamy. In a separate bowl, mix together the flour, cornmeal, garlic powder and a little salt.
- Dip the fish in the eggs and then in the cornmeal mixture, until well coated.
- Add 1/4-inch of oil to a skillet and fry the fish over medium-high heat. Cook until the fish easily flakes, or about 4 minutes per side.
