Golden Carrot Bake is a great combination of carrots, rice and oozy cheese making it the ultimate side dish. 

Ingredients

  • 3 cups carrots, shredded
  • 1 1/2 cups water
  • 2/3 cup long grain rice, uncooked
  • 1/2 teaspoon salt
  • 2 cups American cheese, shredded
  • 1 cup milk
  • 2 eggs, beaten
  • 2 tablespoons minced dried onion
  • 1/4 teaspoon pepper

Directions

  1. In a saucepan, combine carrots, water, rice and salt. Bring to a boil. Reduce heat and simmer, covered for 25 minutes. Don't drain.
  2. Stir in 1 1/2 cups of the cheese. Add the milk, eggs, onion and pepper. Mix well. Pour into a greased 1 1/2 quart casserole dish.
  3. Bake uncovered at for 1 hour.
  4. Take out casserole and sprinkle remaining cheese on top. Bake an additional 5 minutes or until cheese is bubbly and brown.
